The lake of Aydat : pure nature -
located in a wooded environment at a height of 2640ft (800m), the lake of Aydat and its 163 acres (65 ha) is the largest natural lake of Auvergne. It is a classical example of a volcanic dammed lake, its waters are held by an old lava flow vomitted centuries ago by the two puys of Lassolas and La Vache. You will appreciate all the bucolic charm of this place by following the footpath surrounding the lake. You will in that way follow the steps of Sidoine Apollinaire who appreciated this site on the 5th century, he is supposed to have built a house on the little island which bearsitsname, near the northern bank.

A summer at the lake of Aydat - For the water sport lovers, the nautical base of Aydat proposes several activities like canoeing, windsurfing or pedalo unless you prefer a sunbathing on the safe-guarded beach. The lake of Aydat is the most appealing spot of the region and the favourite place of the inhabitants of Clermont-Ferrand thanks to its new arrangements. Fishermen can enjoy themselves here too, as the lake is very appreciated for its population of white fishes, especially carps and roaches. At the lake of Aydat, you cannot be bored !
A wander in the high valley of the Monne - Near the lake of Aydat, on the northern foothills of the Sancy, a hiking footpath starting from the village of Mareuge will make you discover the pasture land of the valley of the Monne. On the summits of the puys of Montenard of the Vedrine and of Baladou, you will enjoy a panorama over the deep coniferous forests and the pastures where are scattered the "burons" (small buildings where cheese was made), witnesses to the former pastoral activity. In this mountainous country settled by the Templars since the 12th century, it seems that the time has stopped for the pleasure of the hikers.
Trouts "à la crème"
Ingredients for 3 people
. 3 nice trouts ,
. 4,5oz butter,
. the juice of one lemon,
. 3 minced shallots,
. 1large spoon of minced parsley,
 
. 1 glass of dry white wine,
. 1 large spoon of fresh cream,
. salt, pepper,
. 3 slices of lemon for decoration.

Prepare the stuffing by mingling butter, parsley, shallots and the juice of a lemon. Share it among the well-cleaned trouts and stuff them with it. Butter the dish to put the trouts in it, baste them with wine. Cover the dish with a sheet of aluminum and let it cook 10 mn in a hot oven. Add a lemon slice on the top of each trout and serve immediately with fresh cream.
